1. Physical actions of the conversion are:

uw-imap (cpimap) is disabled
cppop is disabled
neomail is disabled
existing mbox mailboxes are converted to maildir format
existing IMAP subfolders are converted to maildir format
courier-imap (+pop3) os installed
exim is updated to include integration with courier imap

2. If you want documentation on the new imap and pop server you can get it from the courier-imap site:
http://www.courier-mta.org/imap/

3. It's the way forward. The new system has several benefits, which include better performance; improved mailbox locking; simultaneous IMAP account access; use of open source code. I would imagine that cPanel will continue to support mbox, but will switch to maildir as the default soon.

4. No, just be aware of the above.
