2) What are the benefits of installing "dns only" and is that a solutin we could use? We would then need two dedicated servers as I understand it, but the Clustering part, I don't really see how it would work and what the benefits would be for us when we have 50% of accounts on servers that are not cpanel?

What you could do is use one server for cPanel/WHM hosting and for adding/removing custom DNS records then use cPanel DNS Only on the second nameserver to just sync the records among the 2 servers.
