I'd prefer debian honestly, but what would be really neat is if you could mirror the setup in a limited format on a local ubuntu or debian virtual machine. I find it much easier to deal with virtual machines that are debian or ubuntu than centos ones.
I was forced to move away from Debian 5 server to Cent OS 5.4 just to have CPanel running. So my +1 vote for Debian or Ubuntu LTS
I notice many people viewing this thread, so I wanted to provide an update:
In the long term (still no timetable), we are looking to release an OS Agnostic (OS decoupled) version of cPanel & WHM in addition our current cPanel & WHM offering.

Thought I would chime in and give another vote for Ubuntu.
I'm just a end user but I do host games and voice services, and Ubuntu 10.04 X86_64 uses 48% less CPU usage over CentOS 5.5.
Plus I find Ubuntu just easier as a whole not only to work with, but to administrate. Webmin is a help full tool but it doesn't offer what Cpanel can.

+1 here, and I will gladly help testing this! I have been longing for a Debian/Ubuntu version for years (I absolutely loath CentOS, can't work with it). So, if there's anything to be tested, let me know and I'll get started.
I'd also like to see support for Debian. I've been using cpanel for years and recently took a linux administrator job at a company that has Debian on just about all of their dedicated and shared servers.. and PLESK!
I'd love to be able to switch them all to cpanel!
