Is it possible to have additional logins (other than my own) into my website's cPanel? If so, is it possible to restrict these additional logins to only have access to one of my subdomains and not my main website?

You can create a FTP user for the folder to which subdomain is pointing to. This will restrict FTP for the user to that particular folder. But you cannot create additional cpanel logins to your cpanel.

What you're asking for is effectively WHM, possibly with a reseller function. What you want is the ability to create sub-cpanel accounts for other domains and have them managed by cpanel accounts - cpanel doesn't work that way. What it does provide is the ability to manage cpanel accounts from WHM. (of course, this may not be quite what you are asking, as with WHM accounts there's no parent able to manage the child account, without extra software - but see next paragraph).
If you want some more flexibility with that, there's a little package available from deasoft called WHM Reseller. It's been around for long enough to be relatively mature and allows WHM resellers to resell WHM, as well as extending some other WHM functionality to normal resellers (for instance, it makes a copy-from-server-to-server function available). www.deasoft.com for more info. WHM Reseller does provide the sub-WHM account concept you were seeking, I beleive. Perhaps the authors may chime in?
