Dedicated Mail Server

I assume this is possible but am not finding the information i Need. Mainly I want to create a central mail server where all incoming mail enters first, there it can handle the bulk of spam/virus etc. After it has cleaned the mail it sends it off to the other servers to the correct locations. I am hoping a setup like this would take some load off the other servers due to high mail load etc. Anyone know how this would work?

We do this using Postfix, MailScanner, and Spamassassin and it was installed in that order. Also see http://forums.cpanel.net/showthread.php?t=48452 thats where I got the information to move forward with this project.
