    Default How to change default character_set_system variable?

    Hello,
    how can i set deafult character_set_system to cp1251 because it is utf8?
    I also want to know how to change defaults of this variables:
    | collation_connection | cp1251_general_ci |
    | collation_database | cp1251_general_ci |
    | collation_server | cp1251_general_ci
    to look like:
    | collation_connection | cp1251_bulgarian_ci |
    | collation_database | cp1251_bulgarian_ci |
    | collation_server | cp1251_bulgarian_ci
