2 Servers running different sub-domains. Is it possible?

Server 1, hosts "sub1.hello.com"
Server 2, hosts "sub2.hello.com"

I have done this quite a bit.
Using your example of the domain hello.com:
First, set up the second level domain on one of your boxes (assuming you host it), or set up the first sub-domain on that box. e.g. sub1.hello.com note the IP of course.
Then on the second box set up sub2.hello.com and also note the IP of that account.
Finally, go to the box or service who is handling dns for hello.com and add an A record for each:
For examle:
sub1 IN A 123.45.67.89 (IP for sub1)
sub2 IN A 123.98.76.54 (IP for sub2)
There are a few other ways to tackle this, but the one above should suit you.
