for the past two nights, cpanel has died over the middle of the night (while sleeping go figure) and I had to manually restart it.

1) Where are the error log files for cPanel errors?
2) What do i do?

The cPanel error log is in /usr/local/cpanel/logs/error_log and sometimes also may log to /var/log/messages if there's a stunnel problem, for example.

about your issue you have try an update of the cpanel

using the current "release" version. Which is 82.
/var/log/messages is very long..... and in the error_log file there is nothing.
grep cpanel /var/log/messages
will give you all reference to cpanel. So you can dig out the error easily.
