Why on earth would a host want to reveal the Kernel version in the vsite panels?
and
How can I delete this from the cPanel (vsite) side-bar?

You do realise that scripts like phpsysinfo and
<?php
phpinfo();
?>
also reveal the kernel?
Really it's not hard to see the kernel your system is running :-X
Yes, and this is why we have "phpinfo" in the php.ini disable list.
I understand what you are saying, but I also understand that some of the more deadly hacks to a server come in the form of kernel hacks.
I also understand that information obscuration is a good security technique, so I ask, Why put out this stuff on a silver platter to a potential hacker?
And I ask again, for what logical reason is the server's kernel version appearing in the vsite cPanels?
And, how in the heck can I switch this off?
The version of Kernel is displayed in any good PHP shell.
It takes nothing to upload this and it's displayed as part of the server information.
So there's a way around the "phpinfo" disable list...

Im not certain if you can switch that option off, but its just so you can view and know the satistics. Why does this bother you? Try going into your WHM and getting it switched off
