When you get to Profile :: Apache :: PHP Main :: PHP Specific :: Basic click Advanced Configuration to see more options. Under Apache, you will see the option to enable mod SuPHP. Note that PhpSuExec is no longer available in EA3, replaced with SuPHP.

And What will happen with older versions of C-panel that have phpsuexec?

Php scripts that will not work anymore?

They will continue to use phpSuExec until Apache/PHP is recompiled. After being recompiled in EA3, phpSuExec will no longer be used - so when you do this, I'd recommend using SuPHP instead.
