Default How do i secure my email servers?

Hello i have serveral purchased certificates.
And now i am wondeing how do i secure my mail pop3 and ssl in cpanel's SSL/TLS manager.
I have ssl up and running on www.mydomain.com and it is working like a charm with no errors?
Can i use the same certificate installed on my domain to secure the mail servers.
    For example mail.mydomain.com?

Also i am wondering if i can use 2 separate certificates email.
    1 For mail.mydomain.com outgoing and 1 for mail.mydomain.com incoming?
Can it be setup that way or how can i fix it i do not want to use my web-host default ssl!
Or can i simply just use 1 separate cert for both mail.mydomain.com inc and mail.mydomain.com out?

I hope someone understands and can share some light on this.
