    Default Image Logging

I believe that apache logs requests to files and so on, into log files...

So how do I disable image logging on a whm webserver? and for that matter any sort of logging request...

The same way you would on any apache server. You'll need to go on over to apache.org and look through the extensive v1.3 apache documentation on how to create custom apache logs. Be aware that doing so will screw up the cPanel bandwidth caculations completely.
