    Default Increase loggin on pop3d and imapd

    Is it possible to increase the log level on pop3d and imapd.
    Right now it only logs when a user logs in or out of the imap og pop3 daemon, i'd like to log as much as possible, such as when a user deletes a mail etc.

    Correct. The pop3 daemon, cppop, is closed source and the only options you have to infoluence it are in WHM. I'm not aware of a configuration file for the cPanel provided imap server, though there could well be one.
