which php.ini to edit

I have found multiple php.ini files on my system... which ones should I edit?

For anyone else wanting to know the answer to this question ( i'm sure this thread will pop up as a search result for those that use the mighty search feature [ btw, thank you SO MUCH FOR SEARCHING!! YOU ARE ONE OF A KIND! ] ). Run the following from bash prompt:
php -i | grep php.ini

You can also place the following line in a document in your web folder, if you intend on leaving it up, you may want to password protect the directory so others can't view the information.

<?php phpinfo(); ?>

Name the file anythingyouwant.php load it up in your browser and look at the path it shows to the php.ini file.
