You can remove one cert and add a different one in it's place as often as you like.

I'd suggest using a self-signed cert when developing/testing the site and then buy a cert when the site goes live. Switching certs on a live site may confuse users.

Hardly anyone (if anyone at all) will buy from your site if you go live with a self signed certificate because of the inherant security warnings but its fine whilst you develop your site

A cheap certificate, like the ones from www.godaddy.com - will be just fine for both while you're testing and when you finally go live. I'd just get a cheap certificate now if I was you, no point in putting it off. There's very little observable technical difference between a cheap certificate and an expensive one.

    Default Sel-Signed Cert Removal

Once a self-signed cert is installed, I find that installing a regular cert still leaves the self-signed cert as the active cert (with warnings). How/Where do I remove the self-signed cert?

How are you updating the certificate?

Make sure you paste in the certificate after you choose the domain name you are updating as it may be retrieving the old one that is currently on the server.
