It seems the password changes automatically every day.
Why is this and where can I switch it of.

Although I'm not sure how to help with your current setup, I strongly recommend you disable a second 'root' login. For all kinds of security reasons, people should first login in with a 'user' ID and then, switch over to 'root' if desired. Doing a direct login as 'root' is never recommended.

How does one go about setting up the switching over to root thing? I assume you mean "su", but how is it done?

By default, every night CPanel automatically locks (changes the password) of all users with root permission for security purposes.

Except root account, isn't it?
So I guess there must be a file of accounts not to lock with only root in it.

Of course, root password isn't locked. Only users other than root with root permissions.
