Are you referencing when Exim rewrites mail subject lines to indicate spam? This setting is located in WHM -> Service Configuration -> Exim Configuration Editor in the filters section of that page.
If not, can you be more specific as to where this functionality was located?
I don';t exacly remember, but I thought that ware in Spamassasin Configuration in cPanel mail accounts. On the top there were option that permit you to change the "rewrite_header Subject" as you wont.
I saw that now, there is an option in the locatiion where you wrote about, but this funcionality was managed only from WHM, and it is set globaly to all server, not for separate accounts.

You'll need to enable the old spam system in the exim config editor in whm if you need this option. However the old system was almost 300% slower in some cases.
Hello
Thank you very much for your information, now i know what to do, and why this option was removed from new configuration.
