Are there any downsides in checking off in Service Manager to restart exim, httpd, mysql etc. when they go down?

I noticed they weren't checked by default so just curious if it works well.

You mean having "MONITOR" checked to auto-restart?. YES, keep them checked.

Yes, I would recommend you to select that option. I think it will restart the service automatically when the service fails on the server.
