Is there a way for my clients to set disk space and bandwidth quotas for sub-domains that they create?
Not at this time, I do believe.
Some pretty fancy coding would be necessary to enable that future. I did read somewhere in this Forum about being able to create a Sub-domain or FTP account (forget which) that provides another Cpanel for them specifically, but dont' remember where.
All in all, subsidiaries of an account are still the responsibility of the account owner. Otherwise, might as well go for setting a new account and control WS & DT that way.

I was thinking that since you can put a quota on mailboxes, that it wouldnt be that hard to put on subdomains. Wouldnt it be the same concept?
Might be, but doesn't seem like an option right now. You could create the subdomain through WHM which gives it its own dispace and bandwidth allowance (as well as control panel, e-mail, etc...).
