Settings for getting spam under control

Hello everyone, does anyone know of documentation that I can read on how to effectively setup my server (whm) for email use only in order to control spam. There are a couple of emails that are getting about 500 spam emails everyday single day, and I don't know what to do. We got a completely new dedicated server exclusively to handle the email traffic for this domain.
