Simple question MX Record question...

Hi,

I'm new to all this MX/DNS stuff but I've had a request for me to change the DNS entry on an account to another IP. They basically want their email to be directed to a different server than their web account.

Can anyone let me know the correct procedure to do this as I dont want to dive straight in!
