Smart host for just one domain and not all on the server

I am having a problem with a forgein host. I can not deliver to them. They have told me to set up SMart Host to gmx.theirdomain.com to over come the problem for now. Allot of my customers send e-mail to that host in Israel.

Where and how can I set up the transport for just mail sent to that host so all other e-mails will be delivered regularly??

I have looked ion Exim Manual and forums.
