There isn't much in it. If a security exploit in cPanel is found, then the Stable version is always upgraded to one that isn't vunerable. Past experience has shown that when required, security updates are released in edge/release/current versions much sooner than they are with stable - hours or even days earlier. I guess cPanel have to be sure the exploit fix is "stable"!
I usually run "Release", however I sometimes go for "Current" if there hasn't been a release build put out in a while.
I know some people even run Edge on production servers, but that just might be taking it a bit too far.

The "Release" build is usually a good compromise, since it tends to have fixes for the buggy "Stable", but without the soul-destroying show stoppers of the Edge releases... although recent experience with 10.6.0-Rxx does make me wonder about this!! (something's just not right when the "Release" is newer then the "Current")
Agree, too many versions is confusing, its better having 2 version (stable and beta) and only releasing patching for each issue.
