I was doing a yum update and a kernel was listed, I was wondering if it was ok to install a newer kernel without breaking cPanel?

Depends on whether or not if you are using a stock kernel or a custom kernel on your server. Chances are you are using a stock kernel, but you may want to ask your datacenter or the people that set up your server regarding kernel update procedures.
If you update your kernel and it does not boot, then you won't have access to your server (unless you have KVM access).
It's the stock kernel.
root@alpha [~]# uname -r
2.6.18-92.el5PAE
And I installed 2.6.18-92.1.22.el5PAE
I don't think it'll make a difference but I wanted to check.
