I have pretty much cut out much of the spam coming to my server but there are still say 20 emails from someone@somedomain.com for instance trying to send mail to domains that have never existed on my server....

    how do stop this??

    thanks in advance

Ban the sending IP if its static. Otherwise there is nothing to prohibit a query to existing mailboxes.
