A very basic question about an MX record

I have a customer that was their MX point to a different IP so I changed that in "edit dns zone" in WHM. Do I also have to change mail.theirdomain.com to point to that IP as well or no?

For the time being I have the MX record pointed to the offsite IP

and I have mail.theirdomain.com set as a cname simply pointing to theirdomain.com

Update mail.theirdomain.com to an A record to their IP.
Then, update the MX entry to mail.theirdomain.com
Also remember to remove theirdomain.com from /etc/localdomains and add it to /etc/remotedomains
