When I add a subdomain, everything appears ok until I go back to the list of subdomains.

In the ( )'s, its suposed to show the folder its mapped to... whenever I create a new subdomain, the ()'s are empty.
    So it would show:

    subdomain.mydomain.com ()

    instead of

    subdomain.mydomain.com (/public_html/mydomain/subdomain)

    Any ideas?

Have you tried updating the cPanel to latest STABLE? Also check /usr/local/cpanel/logs/error_log while browsing the subdomain page to see any relevant errors.

I changed my theme to X3 as suggested by another topic I just read and it works now.

X3 is awesome cause it allows you to change the document root for FTP accounts and SubDomains... it lets you put them in sub-sub folders.. X2 and X never allowed that before. Nice upgrade.
