it would have to have its own dedicated IP and

in "WHM >> Service Configuration >> Exim Configuration Manager" under the "Domains and IPs" tab:

"Send mail from account’s dedicated IP address"

Per the option description, this will automatically send outgoing mail from the account’s IP address instead of the main IP address. Warning: If you turn this setting on, make sure that reverse DNS entries match the ones in /etc/mail_reverse_dns.

Wouldn't this turn on this function for ALL accounts instead of just one? As per the OP's question, is there a way to have one (or some, but not all) account with a dedicated IP use their IP for SMTP, while the rest use the main IP (including those with dedicated IPs)?

No, the document I provided displays information on how to manually configure the IP addresses Exim uses to send email for each domain name. It includes information on manually editing the /etc/mailhelo and /etc/mailips file.

Thank you.
