Wouldn't this turn on this function for ALL accounts instead of just one? As per the OP's question, is there a way to have one (or some, but not all) account with a dedicated IP use their IP for SMTP, while the rest use the main IP (including those with dedicated IPs)?
No, the document I provided displays information on how to manually configure the IP addresses Exim uses to send email for each domain name. It includes information on manually editing the /etc/mailhelo and /etc/mailips file.
