Is there any way to view what cron jobs have been run on a server over the past day or so? Something like this would help to track users' activity overall.

You can install logwatch which will give you a daily summary. http://www2.logwatch.org:81/
There also is a script we have used that will list all cron jobs. Will look for it if you are interested.

    Okay.
You can find it here: http://www.ecinames.com/utilities/
I don't take any credit for writing this script and there is no copyright info included with it.
Can be called from the command line like this: ./crontabreport.sh "email address".
