A review of Exim logs shows that most email being sent out from the server is bounce back emails for domains we don’t own (ie people are trying to use us as an open relay and we are responding). Can we configure Exim to stop sending bounce backs for domains not on the server?

Hey there! While I'm sure there is a way to do that, it would require customizing Exim itself, as there aren't any options in cPanel or WHM to handle that.

A better option might be to change the unrouted email handling behavior inside cPanel's Default Address settings page:: Email Routing | cPanel & WHM Documentation

If the amount of bouncebacks is becoming an issue with your mail server, you can set this to the "Discard" option, which will not send any type of failure notice to the recipient.
