Copy of sent email stored on server?

I recently started using Outlook 365 to IMAP with my Gmail. I use Gmail's default settings for my incoming mail, and a POP account on my server for outgoing mail.

Today I discovered that Outlook wasn't saving my sent mails in the Sent folder. I had the setting selected in "Outlook Options > Mail", but didn't realize that there was a second setting under "Advanced > Send / Receive > Edit > Account Properties > Advanced" that took precedence >:-(

I'd spent well over an hour working on an email to a potential new partner, but it bounced because of a minor typo in their email address. And now it's not in the Sent folder, it's not in the POP account on my server, and I can't find it under Gmail's "All Mail".

Is there any other way to retrieve this email? Is a copy of it saved anywhere on the server? Or am I stuck starting over?

To clarify, you have your mail routed to Outlook365 and you're using GMAIL AND you have an account on the cPanel server which receives mail?

if this is correct the mail wouldn't be located on the cPanel server at all and this would be best asked to Outlook365, if the mail was created on Outlook365 I remember at one point you used to be able to right-click the specific folder and restore mail, though I'm unsure if this is still the case.

Can you not get the data from the bounce?
