I will be getting a new VPS.

How is the DNS version installed? Can I do it myself? I don't see any documentaton.

Can the full cPanel be installed on the same server as well?

You can run a nameserver when installing cPanel / WHM. If you wish to run hosting and a nameserver on the VPs, simply install cPanel / WHM and enable the nameserver in WHM.

If you only wish to use the VPS as a nameserver, install DNS ONLY. You cannot install both on one machine.

What are the minimum package prerequisites for DNS-only install? I intend to do a CentOS minimum install and would not like to have anything extra in, in order to save RAM and HD space.

Same as cPanel / WHM. The minimum install is the right way to go. Make sure you have wget and the development libraries (gcc, g++, etc). No services are needed as cPanel DNS ONLY will install them and definitely no x11.
