I think it is offered for those who are setting themselves up to run in a clustered environment, instead of a "cluster" or group network of standalone cpanel/WHM servers.

This way you can have one server doing DNS, one for MySQL, one for Exim, one for cPanel connected to a NAS filesystem for the actual accounts and files etc.

What are the advantages and why would you want to use the Cpanel DNS server product?
Just curious if it would be something i may be interested in. Im going to be running a few servers, but why not just use the DNS built into each server?

The main advantage is if the cPanel/WHM server goes down, DNS will remain functioning. You may be thinking "wait, everything is hosted on that server, so what use would DNS functioning have?" DNS Clustering shows most of its benefits if you have DNS entries pointing to other servers. A common example would be changing your MX entry to point to another server (perhaps for using GMail for your domain instead of cPanel/WHM). If the cPanel/WHM server was offline in this scenario, DNS would remain functioning thus email will continue to be forwarded to the remote server.
