From the release notes for WHM/cPanel version 62:

All websites receive an SSL certificate
Any website created in cPanel & WHM now receives an SSL certificate. A self-signed certificate is added if no other SSL certificates are available.
What exactly does this mean? Will version 62 *force* AutoSSL on us? None of the accounts on my server are ready for SSL (mixed http / https content, etc.)

Hello,

In cPanel version 62, the AutoSSL feature processes the SSL certificate request immediately when an account is created, and immediately when a new addon domain or subdomain is created. In prior versions, the AutoSSL feature didn't process the SSL certificate request until the nightly maintenance cron job.

This change will not alter the preexisting settings configured under the "Manage Users" tab in "WHM >> Manage AutoSSL".

Thank you.
