I have a client that has its own server where he handles mail. Since I will host his www, I set up an account and CPanel configured DNS info for that domain in the local host.
The problem I have is that when I want to send mail to the client, our mail server (which is the same server we use for development) checks DNS and figures that the mail is also handled in our own server, so mails never get to the actual clients mail server. Please advise. I already changed MX info and still doesn't work. Thanks.

If I understand your question correctly...you need to remove his domain from the localhosts file on the server. Otherwise if you have anything on your server trying to send to his mail...it thinks his mail server is still on that box.

Of course, you need to make sure the MX records are correct for his domain.
