I want to direct a subdomain like hosting.mydomain.com to an ip address with https. How do I do that when editting the DNS zone? If I fill in the IP it's http by default.

This is what I have right now:

    hosting 14400 IN A 12.34.56.78
    www.hosting 14400 IN A 12.34.56.78

    Thanks in advance!

You're looking at 2 things here. The DNS will point the name to an IP address. On that IP address (server), you can have a multitude of things running including both http AND https. Neither http or https works "by default" as you say, it uses whatever the user enters in their address bar in their browser. I would suggest adding another DNS entry like:
which will make secure.hosting.com point to the same IP, then redirect the user to https://secure.hosting.com/ when you want to send them to the secure site.
