Edit DNS zone to keep email but use external webserver?

I need to alter an client's account so that their website is served by an external server, but to keep their email where it is.

If I amend the A entry in their domain.com's DNS zone so that it has the remote server's IP address, what impact will that have on the MX record (it's set to domain.com.)... won't that mean their mail is handled externally too? It needs to stay where it is.

If the MX is pointingto domain.com and you want to update that A record, it will affect e-mail delivery. The easy solution which you would normally use is to have an A record such as mail.domain.com which the MX records points to.
