I was working on the english language file, to translate it into italian.

This morning, after an update of cpanel, I can access no more to the
Main >> Languages >> Edit a Language File
i.e.: I can't see the normal page and I see the code of it instead

Can anyone tell me if it is a problem for me only?

I am unable to replicate this issue on the test server I have access to. Try running /scripts/upcp --force (or via WHM, upgrade cPanel and check the checkbox for the forced re-install). Typically this will resolve issues such as the one you are experiencing.
