Just install cpanel as normal, It will install over ensim and ask you if you wish to convert those accounts up into cpanel from ensim. Make sure the IP is in the license server first or else it won't work.

I currently have a server with ensim
I am getting a new server (different host with cpanel) next week

How shall i convert?

Install cpanel on old server, convert. Backup
then install it on new server and import?

Or can it be done direct?

cpanel will convert all ensim accounts to cpanel if you want it to. I would back up the user files to a folder in the / directory. No need for another server. After you've backed up run the cpanel installer. It will prompt you to install uninstall ensim, install cpanel, and convert all the accounts to cpanel. All site files, emails, and mysql databases should be intact. If you're unsure how to do this email cpanel support and they should do it for you.
