We have a new client that is using Ensim 4.1 and we exclusively use cPanel 11. She wants us to transfer her site to our sever; the site is 16 gigs. We do not have ssh access to her site, so we had to ftp backup her site to our server. But I am not familiar with how to "restore" or get her site active on our server from ensim to cpanel.

She also has about 17 mySQL db's to make things interesting

    Restore

Inform her to upload the backup file under public_htm and You will restore that for her. Then you simple need unzip that file under her public_htm folder.

    /home/username/public_htm/ # unzip XXX.tar

    Regards,
    Amit

Assuming you did a complete backup from her old cPanel and have this backup on your own server now, simply move it to the /home/ directory and run the restore tool from within WHM.

edit: just reread the part about ensim. Have you tried using the account transfer tools in WHM using username and password?
