Error logs?

    How do I check the error logs on my server to determine why it is crashing? Sometimes it will just randomly crash and not recover and it has to be manually rebooted from the console. It's been a while and I have forgot how to check the error logs, apache, server logs etc...

    check /var/log/messages

    I get this when I do that command:

    -bash: /var/log/messages: Permission denied
