From Shared To Dedicated - Making the Transition

I have been on a shared hosting plan for about 3 years and learned the ins and outs of Cpanel there, when I moved hosting companies and got a virtual dedicated server I made sure (and paid extra for) Cpanel. Now I am just getting a look at my new server and everything is VERY different, I have no idea how to access folders, change password protected directories etc.
Does anyone have any advice or is there a writeup somewhere to help with the transition?
