Edit /usr/local/cpanel/whostmgr/docroot/templates/menu/topframe.tmpl
and remove
[% whm_variables.BASEOS %] [% whm_variables.envtype %]


Note: it will just get overwritten during the next update
you could add a /scripts/postupcp
to remove above

I'm glad @dalem was able to help you get a sufficient resolution for this. I do want to point out that this kind of customization isn't something that is supported by cPanel, this doesn't need to stop you from making it just something to be aware of.
