How do I temporarily shut down webserver

Hi there everyone,

I moved all accounts from an old server to a new one and now I would like to temporarily shut down the old webserver long enough to ensure that all domains are pointing to the new server by testing each one in a browser(I understand I could tracert, but I also want to make sure all are working as intended).

How would I shut down the webserver via shell, then restart it when I'm done?

Go on, have a guess
First, you need to stop it restarting:

service chkservd stop

Then you need to stop httpd:

service httpd stop

When you want to start it up again:

/scripts/restartsrv_httpd
service chkservd start

Just for clarification, should I still be able to access WHM admin panel(server.domain.com:2086)?
