incomplete apache access_log

I need to get a full apache access log.

My /usr/local/apache/logs/access_log shows only horde, cpanel and addon scripts usage. It's currently not showing users' usage.

I know we have a dir with domlogs, but I'm unable to tail all the files at once.

Does anyone have a tip on how to enable full logging in access_log ?
