    Check the EasyApache build log

The EasyApache build log will show the reason that mbstring was not included in the PHP build. The logs are stored in /usr/local/cpanel/logs/easy/apache. The logs are named with numbers, and there is one build log for each EasyApache run.

Open the log for the most recent EasyApache build with less, and search for mbstring. There will be a notation indicating why it was not included when PHP was compiled.

If this does not help, please submit a ticket so that we may log in and investigate for you. There is a large number of different reasons why this may have happened, and it would be most efficient for us to investigate directly.
