I have moved my site to a dedicated server and people say I should turn off suPHP and suEXEC to save resouces and nobody else on the server.

Is it any other obvious things in cpanel I should turn off to lessen the CPU and memory usage that I dont need now when in on a dedicated?

That's not a justification that I would consider for disabling those levels of security - if the site is insecure in any way they you're just opening up the rest of the server to them if it's exploited. Better off picking a server spec that is right for the required task.
