You will need to complete different steps for setting up Amazon SES for incoming mail and for setting up outgoing mail.

To receive incoming mail in accounts managed at Amazon SES, your cPanel server will not have a lot of involvement. You will need to make sure you create MX records for your domains that point to Amazon SES. Amazon provides their own documentation for these on the following pages:
