What are the latest versions of MySQL and PostgreSQL supported by CPanel and is there a webpage somewhere where I can always see the latest version numbers? The CPanel website only seems to give versions of supported distributions.

There is no public list of the latest versions supported by cPanel, they're usually listed in WHM > Tweak Settings or WHM > Software > Apache Update.

IIRC, the latest MySQL build is v4.1.* and Postgresql is v7.*

My current hosting company is using PostgreSQL v7.3...please don't tell me this is the latest version CPanel supports  (7.4 was released over 2 years ago, and the current version is now 8.1...)

The latest version of postgresql supplied by RedHat Enterprise is v7.4 which is the highest version that cPanel currently support, AFAIK.
