Locking Down Mail Server

How would I go about locking down my mail server (exim) by only accepting SMTP trafffic from specific IP subnets?

I have the APF firewall, but I am unsure if this is where I should be looking?

You should use IPTABLES for drop all port 25 trafic except the IP ranges you want to accept.
